Things I Have a Yen For



 Hey all!

I'm trying to eat low-carb this week to drop 2-3lbs before Vegas.  Don't worry, I'll be back to bread, potatoes, and pasta next week! Anyways, I have a pretty good cookbook called "Eating Well Serves Two."  Some of you may be familiar with the Eating Well website which has lots of healthy recipes, but I like this cookbook because all the recipes are scaled to feed two people with minimal (if any) leftovers.  Some people love leftovers but Mike and I do not, with the exception of pizza of course. 

Yesterday I had to have two cavities filled which is always a little nerve-racking but even more so when a new dentist whom you don't know very well is doing it.  (Side-note: one of the hardest things about moving to different parts of the country is finding a new dentist, doctor, hair-stylist, nail place, etc.)  Anyways, the cavity fillings went OK except that the dentist had some trouble numbing me...I swear he had to give me like 4 shots in the same area because according to him "my tendon is very dense" whatever that means.  Are you all cringing yet? Needless to say, once the anesthesia wore off I was SORE and couldn't even open my mouth all the way.  My plans for a crispy cob salad dinner went out the window and I searched for a low-carb soup recipe in my cookbook.

I wanted to share the recipe for this soup with all of you because it was really good! Surprisingly, Mike saw the cookbook opened to the page for the soup recipe and he wanted to help me make it.  It's called Vegetable Lover's Chicken Soup (it is scaled for 2 people on the website).  The recipe produces two servings of about two cups each.  I was worried it wouldn't be filling enough without any bread but it totally was!  The recipe calls for "Italian seasoning blend" which I made myself with basil, oregano, rosemary, thyme, sage, and marjoram.  Besides being really delicious and using in-season veggies like zucchini and tomatoes, the best part about a serving of this soup is it has only 261 calories! Also, it gives you 70% of your daily value of Vitamin A and 45% d.v. Vitamin C!  The website's picture is prettier but I'll share mine anyways:


BOTH Mike and I loved the soup and I highly recommend it to those who want a low-portion recipe for a summery soup!

Changing tracks here.  I didn't want to write a post solely based on the soup I made last night but I really don't have that much going on that would be interesting enough to write about! So now I will focus on things I have a yen for, mostly expensive things that I can't justify purchasing at the moment!  This all stems from an online-window-shopping addiction.  Anyone else suffer from this?

It's a Le Creuset 7 1/2 qt French oven which, if I purchased for myself, would run me around $300.  I'd even settle for a 5 1/2 qt, but it would still be $265ish.  If I knew when I was registering what I knew now....sigh. I have found that I need some sort of cast iron cookware so that I can make dishes that require both stove-top heating and oven-heating (like a Spinach & Dill Frittata I found in my cookbook).  Currently, none of my sauce pans/skillets can go in the oven.  So I went for a much more economical (though less attractive) alternative:

It's a combo cooker meaning it's part dutch oven with lid, but the lid can also be used by itself as a skillet.  It's made by Lodge which is well-known brand and made in America! It was also only $35 and comes with free shipping.  Can't beat it.

But it's $300.  Melissa got one at her bridal shower....I was envious.  My Dad has had one for awhile that is used a lot at tailgates and things like that....the great thing about it is it's cordless.  The other great thing about the newer model is it's wireless and connects to your phone via bluetooth.  Someday I'll get one.  Maybe for Christmas (hint, hint: Mike).

And of course, what list of things I yen for would be complete without some jewelry?

One of these days I'll get a real job so that I can splurge on a few things I have a yen for :o)  Let me know what you have a yen for...maybe I'll get some good future gift ideas (keep it under $10, folks).
