My parents flew in to Atlanta the Saturday before Easter to visit us in Columbus for a couple days before we went on a mini-trip to Destin, FL.
Saturday night we had a great dinner at The Loft in "uptown" Columbus followed by some outdoor live entertainment.
Sunday we headed to Ft. Benning to play some golf. Well, my Dad, Mike and I played golf while Joann rode along in one of the carts (she claims she really enjoyed herself!). It was a beautiful morning and we played nine holes. Mike and I are pretty horrible and much of the time played the best ball between the two of us.
After golfing we headed home and sat out by the pool for a couple hours. Then, it was time for me and my mom to head in and start working on Easter dinner.
The menu (with pics & recipes):
Salad with home-made balsamic vinaigrette dressing and some french bread:
Green Beans with Red Pepper and Onion (a PW recipe):
Perfect Potatoes au Gratin (a PW recipe):
Herb-Crusted Pork Tenderloin (a Paula Deen recipe):
Dessert:
I was so happy and proud that everything turned out perfectly. The pork tenderloin made quite a mess of my oven with splattering juices but it came out so tender and tasty! Mike couldn't get enough of the potatoes, I think they are his new favorite (too bad they are not very healthy!).
Although it was a lot of work to put together, it was great to share a delicious Easter dinner with my husband and parents :o)
Love,
Christine
P.S. Right at the peak of my cooking frenzy Jesse James the cat had a hyper moment in which he ran across the coffee table knocking down my Dad's glass of RED wine onto our CREAM carpet. I did not get a picture of the stain but trust me, it was big. We got most of it up but I still need to pick up some carpet cleaner and tackle the remains.
Oh, but here's a picture of him all sweet and innocent trying to sit in my shoe:
